Highpresso recently completed a research project for the Little Big Dairy. LBD reached out to us to benchmark their milk. We developed a proprietary milk expansion index process, and then evaluated their milk against the competitors. We found that their milk we less expandable than the competitors, yet had a superior sensory score in coffee (particularly). We gave several recommendations to Little Big Dairy, and they have since published the study at Golden Bean, at Port Macquarie.
